Ingredients

  • 2 cups brown rice

  • 2 cans chickpeas

  • 2 sweet potatoes

  • 1 cup red cabbage, shredded

  • 1 cup microgreens

For the Tahini Dressing:

  • 1/4 cup tahini

  • 2 tbsp lemon juice

  • 1 tbsp maple syrup

  • Water to thin

  • Salt to taste
