Ingredients
2 cups brown rice
2 cans chickpeas
1 bunch kale
2 sweet potatoes
2 beets
1 cup red cabbage, shredded
1 cup microgreens
For the Tahini Dressing:
1/4 cup tahini
2 tbsp lemon juice
1 tbsp maple syrup
Water to thin
Salt to taste
Instructions
Cook brown rice according to package
Roast chickpeas with spices until crispy
Roast sweet potatoes and beets
Massage kale with olive oil
Make dressing by whisking ingredients
Assemble bowls with rice base
