Ingredients
2 cups brown rice
2 sweet potatoes, cubed
2 cups Brussels sprouts
1 can chickpeas
2 cups kale
1/4 cup tahini
2 tbsp miso paste
1 tbsp ginger, grated
For the Miso Tahini Sauce:
1/4 cup tahini
2 tbsp miso paste
1 tbsp maple syrup
Water to thin
Salt to taste
Instructions
Cook brown rice
Roast sweet potatoes and Brussels sprouts
Crisp chickpeas in oven
Steam kale until just wilted
Make sauce by whisking ingredients
Layer rice in containers
Add roasted vegetables and chickpeas
Pack sauce separately
