Ingredients

  • 1 lb rotini pasta

  • 2 cups cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 red onion, thinly sliced

  • 1 cup Kalamata olives

  • 8 oz feta cheese, cubed

  • 1/4 cup fresh basil, chopped

For the Dressing:

  • 1/3 cup olive oil

  • 1/4 cup red wine vinegar

  • 1 tsp dried oregano

  • 1 clove garlic, minced

  • Salt and pepper to taste

Instructions

  1. Cook pasta, rinse with cold water

  2. Chop all vegetables while pasta cooks

  3. Mix dressing ingredients in jar

  4. Toss pasta with half the dressing

  5. Add vegetables and feta

  6. Mix in remaining dressing

  7. Chill for at least 1 hour

  8. Pack in airtight containers
