Ingredients
2 cups sushi rice
4 nori sheets
1 carrot, julienned
1 cucumber, julienned
1 yellow bell pepper, thinly sliced
1 avocado, sliced
Soy sauce for dipping
Rice vinegar
Bamboo rolling mat
Instructions
Cook sushi rice according to package instructions.
Season with rice vinegar
Place nori sheet on bamboo mat
Spread rice evenly on nori, leaving 1-inch strip at top
Layer vegetables in rainbow pattern across center
Roll tightly using bamboo mat
Wet the bare edge of nori with water to seal
Slice into 6 pieces per roll
Pack with small container of soy sauce
