Ingredients
1 lb chicken breast
2 sweet potatoes, cubed
2 cups broccoli florets
2 cups cooked quinoa
1 avocado
4 hard-boiled eggs
4 tbsp pumpkin seeds
For the Marinade:
2 tbsp olive oil
1 tbsp lemon juice
2 cloves garlic, minced
1 tsp Italian herbs
Salt and pepper to taste
Instructions
Marinate chicken for 30 minutes
Roast sweet potatoes at 400°F for 25 minutes
Steam broccoli until crisp-tender
Cook chicken until internal temp reaches 165°F
Portion quinoa into containers
Add vegetables and sliced chicken
Top with halved eggs and seeds
Pack avocado separately
