Ingredients

  • 1 lb chicken breast

  • 2 sweet potatoes, cubed

  • 2 cups broccoli florets

  • 2 cups cooked quinoa

  • 1 avocado

  • 4 hard-boiled eggs

  • 4 tbsp pumpkin seeds

For the Marinade:

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 2 cloves garlic, minced

  • 1 tsp Italian herbs

  • Salt and pepper to taste

Instructions

  1. Marinate chicken for 30 minutes

  2. Roast sweet potatoes at 400°F for 25 minutes

  3. Steam broccoli until crisp-tender

  4. Cook chicken until internal temp reaches 165°F

  5. Portion quinoa into containers

  6. Add vegetables and sliced chicken

  7. Top with halved eggs and seeds

  8. Pack avocado separately
