Ingredients

  • 2 cups farro

  • 2 cups butternut squash, cubed

  • 2 cups Brussels sprouts, halved

  • 1 red onion, wedges

  • 2 cups kale

  • 1/2 cup dried cranberries

  • 1/2 cup pepitas for the Maple Dijon Dressing

  • 3 tbsp olive oil

  • 2 tbsp maple syrup

  • 1 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • Salt and pepper to taste

Instructions

  1. Cook farro according to package

  2. Roast vegetables at 400°F for 25-30 minutes

  3. Massage kale with olive oil

  4. Make dressing by whisking ingredients

  5. Layer farro in containers

  6. Top with roasted vegetables

  7. Add kale, cranberries, and pepitas

  8. Pack dressing separately
