Ingredients
2 cups farro
2 cups butternut squash, cubed
2 cups Brussels sprouts, halved
1 red onion, wedges
2 cups kale
1/2 cup dried cranberries
1/2 cup pepitas for the Maple Dijon Dressing
3 tbsp olive oil
2 tbsp maple syrup
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
Salt and pepper to taste
Instructions
Cook farro according to package
Roast vegetables at 400°F for 25-30 minutes
Massage kale with olive oil
Make dressing by whisking ingredients
Layer farro in containers
Top with roasted vegetables
Add kale, cranberries, and pepitas
Pack dressing separately
