Ingredients
8 oz soba noodles
2 cups shredded chicken (or tofu)
2 carrots, julienned
1 red bell pepper, sliced
2 cups edamame, shelled
4 green onions, chopped
1/2 cup cilantro
For the Dressing:
3 tbsp sesame oil
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tsp ginger, grated
1 clove garlic, minced
Instructions
Cook noodles according to package, rinse with cold water
Whisk together all dressing ingredients
Toss noodles with half the dressing
Divide noodles between containers
Top with chicken and vegetables
Pack remaining dressing separately
Garnish with cilantro and green onions
Refrigerate up to 4 days
